Tomato and Fresh Mini Mozzarella Salad

This is a great salad to make, when you need to prepare things way before you plan to eat. Great for lunch-box or pot-luck takeouts. As you know, typically salads are best eaten fresh- but this one is different. A day or two of marinating fresh mozzarella in tomato juice and herb-ed oil, simply makes it taste heavenly. Ofcourse, you can eat it right away as well.

Drizzle a little olive and flax seed oil to large chunk-cut tomatoes and fresh mini mozzarella. Add some freeze-dried Basil and dried Oregano. Sprinkle some freshly ground black pepper and mix well. Eat right away or let sit in a covered container for a few hours. Just before eating, adding a few drops of balsamic vinegar will enhance tomato taste and bring the juices all together.

Even though this recipe is easy, keeping a few things in mind will help make it exceptional...
  • Add vinegar just before you are ready to eat, otherwise it tends to wilt the tomatoes. It will still taste good, but if you like your tomatoes fresh and a little firm like I do, then you will want to add vinegar at the end. Also use really good quality Modena Balsamic Vinegar for best taste.
  • Make sure your dried herbs are freeze-dried so they lend their awesome fragrance to the salad. Fresh basil for a change does not taste as great in this mix. There is another recipe for it- but that is for another time. :-)
