Roasted Orange Pepper with Cilantro and Parmesan Cheese is a great way to get some Orange color veggie group in your meals! Cut a large orange bell pepper in four parts. Removes seeds and apply all over a little of olive oil or organic butter. Next sprinkle generous amounts of Parmesan cheese in the cavity, a little of freshly ground black pepper and a pinch each of dried basil and oregano.
Roast in oven at 425 F for around 20- 25 mins. Check to ensure that peppers are softened but not too soggy! Remove from heat and sprinkle a little more of freshly ground black pepper (to taste) and fresh dash of finely grated Parmesan cheese. Lastly serve hot on a bed of cilantro.
Cilantro really helps bring the taste of pepper and cheese together! This is again another cooling dish- to be enjoyed on a warm spring evening with a nice, dry white wine- such as a classic white Bordeaux.
