Peel and cut cucumbers in thin slices. Also cut red onion in very thin strips. The key here is to get a good crunchy flavor kick from the onions without it being over-powering with it's pungent taste.
In a bowl, layer cucumbers and onions. Drizzle some home-made Italian Herbs Salad Dressing. Sprinkle a little dried parsley and a pinch of dried Oregano. Top it off with a dash of grated Parmesan cheese and your delicious salad is ready to eat. You can eat it fresh or serve chilled for a refreshing summer lunch.
