Fragrant Corn & Mint Salad

Keeping with the detox theme, here is a very fragrant and exotic Corn & Mint salad. In a pan heat some olive oil and once hot put half a tea spoon of cumin seeds. Once they release their fragrance, put the corn in and cover for couple of minutes. The corn should be cooked but still firm to eat. Last put just a little butter for that special 'buttery' corn taste. Now, let this cool down a bit.

Next, cut some green onions and mint. Use lots of mint!!! We want that wonderful minty fragrance with that special exotic cumin hint. Add corn to this and mix well. I personally don't add any salt to my salad, but if you choose to, then select sea salt or Himalayan pink salt. Finally garnish with freshly ground pepper and your salad is ready to eat.

Note: From an Ayurvedic (ancient Indian healing system) standpoint, it is even more beneficial to add some asafoetida to the hot oil before adding cumin seeds. It tremendously helps balance Vata dosha- with such detox- light diets, Vata in particular tends to go more out of balance. Our typical lifestyle of always being on the run with stress filled days and mere aging also tends to adversely affect Vata dosha.
