To make Khichdi- which is a kind of Indian risotto with rice and lentils (mung dal). Cook rice and mung dal very well and keep aside. Next, add some olive oil in a wok. Add mustard seeds and a little asafoetida.
Once these seeds pop, next add finely chopped green chilies (optional), garlic and onion. Once onions brown up a bit then add the cooked rice and mung dal to this mix. Sprinkle some ginger powder, turmeric and Himalayan pink salt (to taste). Mix well and cover the wok. Cook for a few minutes- all the spices will release their fantastic aroma!
Tomato Salad: cut up some organic tomatoes in large chunks. Add some Italian herb mix and generous amounts of dried parsley. Fresh parsley would also taste great in this recipe- but here in the cold north, we are not always blessed to have it at home! Finally just add a tea spoon of fine quality Balsamic Vinegar (Modena) and mix well.
