Here is a simple to make and a very healthy way to enjoy this delicious vegetable. Boil potatoes in a pot of water. I prefer not to add any salt, since as you will note- out dressing is fairly salty. Once done, cut potatoes in large chunk-pieces.
To make dressing- in a small glass bottle, which allows you to shake vigorously, add two parts olive oil and one part modena vinegar. Add some Italian herb mixture and shake vigorously to mix well.
Next, in a bowl, put boiled potatoes and top with a handful of black olives and capers. Sprinkle dried parsley and freshly ground black pepper. Drizzle our freshly-made dressing and mix well. Serve with freshly grated Parmesan as garnish.
